Amazing Baked Parmesan Chicken

1. Melt 1/2 cup (1 stick) of butter in a baking pan


2. Meanwhile, blend in a blender or food processor until small bread crumbs are formed; pour into shallow bowl:
-2-3 slices whole grain bread
-2 sprigs parsley (tablespoon of dry parsley from the pantry)
-1/2 cup parmesan cheese
-1/8 teaspoon salt
-1 teaspoon garlic powder
-1/8 teaspoon black pepper

3. Skin and remove visible fat from chicken:
2 lb. boneless chicken breast pieces

4. Coat pieces of chicken in melted butter in pan, then coat with crumb mixture; lay single layer in remaining butter in pan.

5. Bake uncovered at 350 until tender, about 1 hour. Cover with foil if chicken begins to brown too much before done. Enjoy!

Strawberry Salad

Dressing:

1 cup Olive Oil
1/2 cup Apple Cider Vinegar or Red Wine Vinegar
1/4 cup Balsamic Vinegar
2 cloves crushed Garlic
1/2 cup Sugar or Substitute
Salt and Pepper to taste
2 shakes Paprika

For best results, mix in blender. *I use slightly less than the recipe calls for both vinegars.

Salad:

Greens (romaine/spinach/et.)
Slivered Almonds - toasted
Montery Jack Cheese
Strawberries - chopped

Toss Dressing with Salad and serve immediately.

Creamy Corn Casserole

This corn casserole is a perfect side dish to bring to a potluck. It makes a big pan, it stays warm, and everyone loves it!

1 cup (2 sticks) butter, melted
4 eggs, beaten
2 8.5-oz. pkg. Jiffy corn muffin mix
2 15-oz. cans whole kernel corn, drained
2 14.75-oz. cans creamed corn
2 cups (16 oz.) sour cream

Preheat oven to 350. Lightly grease a 9” x 13” baking dish. In a large bowl, combine all ingredients. Pour into baking dish. Bake for 1 ½ hours, or until top is golden brown. Enjoy!

Fourth of July Bean Casserole

1/2 lb. sliced bacon, diced
1 lb. ground beef
1 cup chopped onion
1 can (28 oz) pork & beans
1 can (17 oz) lima, northern or navy beans - rinsed & drained
1 can (15-16 oz) dark red kidney beans - rinsed and drained
1/2 cup BBQ sauce
1/2 cup ketchup
1/2 cup sugar
1/2 cup packed brown sugar
2 Tbsp. prepared mustard
2 Tbsp. molasses (opt.)
1 tsp salt (I omit)
1/2 tsp chilli powder (opt.)

In a large skillet, cook bacon, beef & onion until meat is brown and onion is tender; drain. Transfer to a greased 2 1/2 qt. baking dish; add all of the beans and mix well. In a small bowl, combine the remaining ingredients; stir into beef and bean mixture. Cover and bake at 350 degrees for 45 min. Uncover; bake 15 minutes longer.

Spice Mix Cookies

1 box spice cake mix
1 15 oz can of pumkin pie filling
3/4 c. chocolate chips

Mix cake mix and pie filling together add chocolate chips.
Drop by spoon fulls on a greased cookie sheet. Bake for 13 minutes at 350. Enjoy
